ONE-OFF POP-UP RESTAURANT SHOWCASES CITY COLLEGE STUDENTS’ CULINARY SKILLS
There is an air of excitement and anticipation swirling around the offices and team at Brighton & Hove Chamber of Commerce as they look forward to their next event, a partnership with the City Business Club to host a one-off evening of fine dining with a twist - the Pop-up Restaurant on Thursday 2nd February from 6 pm to 8.30 pm at The Gallery, City College, Whitecross Street, Brighton.
The Chamber’s theme for February’s event is Innovation and that’s exactly what the Pop-up Restaurant is all about. Not only will the sumptuous-sounding menu be created and catered by the students at City College for this one-off event, but the speaker is someone who has in-depth knowledge and first-hand experience of how to innovate. Attendees will be treated to a talk by David Amor, co-founder, co-owner and chief creative officer at Relentless Software, the Brighton-based video game developer.
In over twenty years in the video game industry, David has created over fifty games including the Buzz! series for Sony Computer Entertainment, a franchise that has sold over ten million and generated $0.5 billion in revenue. His company, somewhat of a hidden gem in Brighton, now employs around 100 people.
David will be exploring innovation in all its guises particularly how to take a concept from a germ of an idea through to a practical and successful business.
The Chamber is keen to support local further education and the work of young people, and the catering students who created the menu for the evening will be talking to guests about how they came up with the ideas and translated them into a practical two-course culinary delight.
This is a different type of event for the Chamber as it’s open to members and non-members alike. This means anyone can go along, take a client, a colleague, or a friend as a guest and non-members have a taste of what it’s like to belong to the Chamber. There will be plenty of opportunity to network and find out more about both the Chamber and the City Business Club.
“We’re really looking forward to the evening,” says Chamber director Sarah Springford, “not only will we have a chance to welcome people along to a Chamber event who might not have been to one before but we’ll be hearing an inspirational speaker and enjoying what promises to be an evening of gastronomic pleasure and interesting conversation.”

The menu:
Pan fried breast of pheasant with black pudding beignet and sweet peppercorn jus, Savoy cabbage and fondant potatoes
Courgette fritter with spiced puree of butterbean and panache of tomatoes
Seared fillets of red mullet with herbed parisienne potatoes, fine beans and ginger and orange hollandaise

Poached pear in red wine with almond cream
